While it’s technically not “Motherhood Monday” I wanted to share this quick & easy recipe that my daughter has been loving. It’s great for teething and a great way to get your little one to eat healthy fats found in coconut oil.
We’re trying to put some healthy weight on my little one so things like coconut oil, almond butter and ghee have been sneaking into almost every meal we server her.
These bites are so easy and she can’t get enough!
Coconut-Applesauce Bites
Ingredients:
1 cup organic, unsweetened applesauce (any flavor is fine)
1 Tbs, coconut oil, melted
Directions:
Combine applesauce and melted coconut oil a bowl and mix well.
Line a cookie sheet with parchment paper and drop bite-size drops onto the cookie sheet.
Place cookie sheet in the freezer until bites solidify.
Store in the freezer.
Keep in mind that for many people, too much coconut oil too fast can cause digestive discomfort. So for your little one I recommend starting with a bite or two and seeing how they do. I often make one batch with coconut oil and one without so I can mix them together when she keeps asking for “mow peez!”
