Ingredients
- ½ cup canned light coconut milk
- ½ cup unsweetened, plain almond milk
- ¼ cup chia seeds
- 2 tsp honey
- ½ tsp vanilla extract
- ¼ tsp lime zest
- pinch of cardamom , optional
- 1 cup fresh mango , chopped
- 2 tbsp unsweetened shredded coconut , toasted

Instructions
- In a container with a tight fitting lid, combine the coconut milk, almond milk, chia seeds, honey, vanilla extract, lime zest, and cardamom (if using). Shake to combine, and let sit for 2 hours, or overnight to thicken.
- Once thickened, divide into two jars or bowls, add top layer with the mango, and then topping with the toasted coconut.
