Instructions
  1. Cut the halloumi into ½ inch slices.
  2. Heat 1 tablespoon of oil nonstick skillet over medium-high heat. Add the slices in a single layer and cook until golden, about 2 minutes per side.
  3. Combine the waterlemon, arugula, mint leaves, and hemp hearts.
  4. Drizzle with the remaining tablespoon of olive oil and lemon juice.
  5. Top with the cooked halloumi.
