Ingredients
- 1 zucchini - peeled and spiralized (if you don't have a spiralizer, try a peeler)
- 1/4 cup sun-dried tomatoes in oil - drained
- 2 tbsp fresh parmesan
- 1 tbsp olive oil
- salt + pepper to taste
- 1 tbsp pine nuts

Instructions
- Spiralize zucchini or slice into very thin, pasta-like slices.
- Heat olive oil in a skillet over medium heat. Add "zoodles" and sauté until they soften. Add sun-dried tomatoes and pine nuts. Heat through. Season with salt and pepper.
- Serve with fresh parmesan and enjoy!
