Instructions
  1. Spiralize zucchini or slice into very thin, pasta-like slices.
  2. Heat olive oil in a skillet over medium heat. Add "zoodles" and sauté until they soften. Add sun-dried tomatoes and pine nuts. Heat through. Season with salt and pepper.
  3. Serve with fresh parmesan and enjoy!
