Ingredients

zucchini
– peeled and spiralized (if you don’t have a spiralizer, try a peeler)
1/4
cup
sun-dried tomatoes in oil
– drained

tbsp
fresh parmesan
1
tbsp
olive oil
salt + pepper
to taste

tbsp
pine nuts
Instructions
Spiralize zucchini or slice into very thin, pasta-like slices.
Heat olive oil in a skillet over medium heat. Add “zoodles” and sauté until they soften. Add sun-dried tomatoes and pine nuts. Heat through. Season with salt and pepper.
Serve with fresh parmesan and enjoy!
