Ingredients
- 1 tbsp olive oil
- 2 medium onions - chopped (1 cup)
- 2 cloves garlic - minced
- 3 cups chicken broth
- 2 tbsp fresh cilantro - chopped or 1/2 tsp ground coriander
- 2 tbsp lime juice
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp red pepper sauce
- 1/4 tsp salt
- 1 can corn (or 11 oz frozen)
- 1 can great northern beans - drained and rinsed
- 1 can butter beans - drained and rinsed
- 2 cups fully-cooked chicken breast - chopped

Instructions
- Heat oil in a 4 quart dutch oven over medium heat. Cook onions and garlic, stirring frequently, until onions are tender. Stir in remaining ingredients, except chicken. Heat to boiling and reduce heat. Simmer, uncovered, for 20 minutes. Stir in chicken.
- Serve hot and top with fresh cilantro and a dollop of nonfat, plain Greek yogurt (a perfect sub for sour cream!).
Excellent flavor and quick to make.
