  1. Heat oil in a 4 quart dutch oven over medium heat. Cook onions and garlic, stirring frequently, until onions are tender. Stir in remaining ingredients, except chicken. Heat to boiling and reduce heat. Simmer, uncovered, for 20 minutes. Stir in chicken.
  2. Serve hot and top with fresh cilantro and a dollop of nonfat, plain Greek yogurt (a perfect sub for sour cream!).
