- 4 cups watermelon , cut into 1/2 inch cubes
- 1 15 oz can chickpeas , drained
- 4 cups arugula
- 1 cup fresh mint leaves , washed and dried
- 1/2 cup feta cheese , crumbled
- 1 lemon , juiced
- 2 tbsp olive oil
- salt and pepper to tase
