Ingredients
- 1 large zucchini , sliced
- 1/4 cup marinara sauce
- 1/2 cup shredded mozarella cheese
- 2 tbsp nutritional yeast
- 2 tbsp fresh basil , chopped
- quinoa , prepared (optional - for serving)
- gluten-free pasta , prepared (optional - for serving)

Instructions
- Start by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Slice the zucchini into thin rounds and place on the baking sheet.
- Top each round with a dollop of sauce and a sprinkle of cheese.
- Sprinkle with nutritional yeast and bake for 10 minutes.
- Top with fresh basil and serve over a bowl of cooked quinoa or gluten-free pasta of choice.
Where have you been my whole life? Lol! This recipe is so simple, but it’s so flavorful and delicious! I did season my zucchini with a small amount of salt and black pepper, but it would have been great without the extra seasoning, too. This will definitely be a regular meal for me! I tried it with gluten free pasta this time, but I’ll try the quinoa next time.
