Ingredients
- 3 cups lettuce , chopped
- 1 cup grape tomatoes , halved
- 1/2 cup corn kernels , canned or frozen
- 2 green onions (spring onions , chopped
- 1 cup canned chickpeas , drained and rinsed
- 2 radishes , sliced
- 1/2 avocado , sliced
- 2 hardboiled eggs (optional)
- 1/3 cup blue cheese crumbles (optional)
Dressing
- 1/2 cup greek yogurt (or vegan alternative)
- 1 lemon , juiced
- 1 tbsp dried parsley
- 1 tbsp dill
- 1 clove garlic , chopped
- 2 tbsp olive oil

Instructions
- Combine all salad ingredients in a bowl.
- Whisk together dressing ingredients and drizzle on salad before serving.
