Ingredients
- 1 tbsp coconut oil
- 1/4 of a sweet yellow onion , finely sliced
- 1/2 cup of black beans
- 1/2 of an avocado , sliced
- 1 gluten free tortilla (cassava flour tortillas or rice flour tortillas work well)
- 1 tbsp nutritional yeast
- pinch of sea salt & cracked black pepper

Instructions
- Heat coconut oil in a small skillet over low/medium heat and add the sliced onion. Sauté until caramelized, about 5 minutes. Continue to stir, being careful not to burn the onions.
- While the onions are cooking, add the black beans and sliced avocado to the gluten-free tortilla.
- Sprinkle with nutritional yeast and add the cooked onions.
- Season with sea salt and cracked black pepper and enjoy!
