  1. Heat coconut oil in a small skillet over low/medium heat and add the sliced onion. Sauté until caramelized, about 5 minutes. Continue to stir, being careful not to burn the onions.
  2. While the onions are cooking, add the black beans and sliced avocado to the gluten-free tortilla.
  3. Sprinkle with nutritional yeast and add the cooked onions.
  4. Season with sea salt and cracked black pepper and enjoy!
