- 2 1/2 cups rolled oats
- 1 cup shredded unsweetened coconut
- 1/2 cup raw honey
- 1/4 cup melted coconut oil
- 1 tsp ground cinnamon
- 2 tsp pure vanilla extract

Instructions
- Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.
- Add all the ingredients to a large mixing bowl and mix well to combine.
- Pour the mixture onto the parchment-lined baking sheet, packing the granola down flat on the pan.
- Bake for 25-30 minutes or until the granola starts to brown.
- Allow to cool for at least 40 minutes and then break into chunks.
- Store in an airtight container and enjoy with a cup of unsweetened almond milk or with a side of fruit for a tasty snack!
25 minutes was perfect with my oven. Golden, crispy. Added in a parfait. Its a bit sweet for my liking, but will make again, maybe will a little less honey.
Yummm. These little treats are delicious, I used less honey and added some chopped pecans and almonds about a 1/4 of a cup. Baked for 30 minutes. Soooo good.

How much less honey can I add and still have it hold together? I really don’t eat sweets anymore!
These are really tasty and easy to make, a winner for the whole family. Don’t be tempted to nibble before they’ve properly cooled, as I did ☺️ they do need the 40 minutes to harden otherwise they just crumble.

I had the banana bread overnight oats. But with pecans instead of walnuts. Super good!
Decided to give these a try today and happy I did, they’re so good! I’ll definitely be making them again and am going to try adding to some yogurt as suggested above 🙂
