Ingredients
- 1 large head green leaf lettuce , torn into pieces (about 5 cups)
- 1/2 lb thinly sliced deli turkey , nitrate-free
- 2 large tomatoes , cut into wedges
- 1 avocado , cut into bite-sized pieces
- 1/2 red onion , thinly sliced
- 1/2 cup shaved parmesan (2 oz)
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- sea salt and freshly ground black pepper

Instructions
- Divide the lettuce, turkey, tomatoes, avocado, onion and parmesan among 4 bowls or lunch containers.
- In a small bowl, whisk together the oil, vinegar, 1/2 tsp salt and 1/4 tsp pepper. Drizzle over salad or separate into 4 to-go containers.
- Nourishment Tip: Nitrates are naturally found in many vegetables and are harmless when combined with other compounds of these vegetables. However, when added to preserved meats, nitrates convert to cancer-causing nitrosamines. Look for deli meats and sausages labeled "nitrate-free."
