  1. Divide the lettuce, turkey, tomatoes, avocado, onion and parmesan among 4 bowls or lunch containers.
  2. In a small bowl, whisk together the oil, vinegar, 1/2 tsp salt and 1/4 tsp pepper. Drizzle over salad or separate into 4 to-go containers.
  3. Nourishment Tip: Nitrates are naturally found in many vegetables and are harmless when combined with other compounds of these vegetables. However, when added to preserved meats, nitrates convert to cancer-causing nitrosamines. Look for deli meats and sausages labeled “nitrate-free.”
