Instructions
- Preheat oven to 400 degrees F and coat baking sheet with cooking spray.
- In a large bowl, combine turkey, 1/2 onion, 3 cloves of minced garlic, egg, oats, 1 tsp oregano, 1/2 tsp salt, and 1/2 tsp ground pepper until well mixed. Form small balls (about 20) and place on baking sheet. Bake for 15-20 minutes or until internal temperature of meatballs reach 160 degrees F.
- While meatballs are baking, heat 1 tbsp of olive oil in a medium-large saucepan over medium heat. Sauté 1/2 a diced onion until translucent, 3-5 minutes. Add 3 cloves of minced garlic and cook for another minute. Add basil, red pepper flakes, 1 tsp oregano, crushed tomatoes, tomato sauce, 1/4 tsp salt, and 1/4 tsp ground pepper. Bring to a boil and then reduce heat to simmer for 20 minutes, stirring occasionally.
- Serve meatballs and marinara sauce over zoodles (zucchini noodles), cooked spaghetti squash, or whole-wheat/gluten-free pasta.
This is a great kid friendly recipe! I did sub the fresh onions for 1/4 c. dehydrated minced onions – fresh onions have so much water they tend to ruin your meatballs unless you press them between paper towels first. I also added some basil to the meatball mixture. Yum! My kids ate it up! We also tried the Tinkyada brown rice pasta – my kids couldn’t tell the difference!
A little bit spicy and delicious!
? I loved this recipe! My culinary skills weren’t up to snuff for my kids, so they didn’t like the “big pieces of onions.” So next time I’ll use onion powder for the sauce and meatballs instead of my insufficiently chopped onions ??
That put a smile on my face, Meredith! ?So glad you enjoyed this recipe and will be trying it again with a great idea to modify it!
