Turkey Meatballs in Marinara Sauce

  1. Preheat oven to 400 degrees F and coat baking sheet with cooking spray.
  2. In a large bowl, combine turkey, 1/2 onion, 3 cloves of minced garlic, egg, oats, 1 tsp oregano, 1/2 tsp salt, and 1/2 tsp ground pepper until well mixed. Form small balls (about 20) and place on baking sheet. Bake for 15-20 minutes or until internal temperature of meatballs reach 160 degrees F.
  3. While meatballs are baking, heat 1 tbsp of olive oil in a medium-large saucepan over medium heat. Sauté 1/2 a diced onion until translucent, 3-5 minutes. Add 3 cloves of minced garlic and cook for another minute. Add basil, red pepper flakes, 1 tsp oregano, crushed tomatoes, tomato sauce, 1/4 tsp salt, and 1/4 tsp ground pepper. Bring to a boil and then reduce heat to simmer for 20 minutes, stirring occasionally.
  4. Serve meatballs and marinara sauce over zoodles (zucchini noodles), cooked spaghetti squash, or whole-wheat/gluten-free pasta.
