Ingredients
- 2-3 slices deli turkey (preferably nitrate-free)
- 1 tbsp goat cheese
- 2-3 slices cucumber (cut into 1/4 inch spears)
- 1/4 cup microgreens or pea shoots

- Lay turkey slices flat. Divide goat cheese between the slices and layer each with a cucumber spear and greens. Roll like a burrito and enjoy! Serve with a side of fresh fruit.
