Ingredients
- 4 cups shredded cabbage
- 1 cup carrots , shredded
- 1/4 cup shredded unsweetened coconut , toasted
- 1/2 cup pineapple , chopped
- 1/2 cup cilantro (coriander) , chopped
- 2 green onions (spring onions , chopped
- 2 cups edamame beans , shelled
Dressing
- 3 tbsp olive oil
- 1/4 cup lime juice
- 1 tsp lime zest
- 2 tsp honey or pure maple syrup
- 2 tsp ginger , grated
- 1 tsp soya sauce or tamari

Instructions
- Combine all salad ingredients in a large bowl.
- In a small jar, combine all dressing ingredients. Pour over salad and toss to combine.

Tried this one, liked it yummy but I will add more dressing, and it is light as it is ! Found different kinds of coconut, got the shredded.
