Instructions
  1. Start by preheating the oven to 350 degrees and line a baking sheet with parchment paper.
  2. Next, add the oat flour, oats, shredded coconut, chia, hemp, flax seeds, cacao nibs, chocolate chips, and baking powder to a large mixing bowl and mix well.
  3. Add the eggs, cashew butter, coconut oil, maple syrup, and vanilla, and mix again.
  4. Drop one tablespoon rounds onto the parchment-lined baking sheet and bake for 10-15 minutes or until the edges begin to brown.
  5. Allow to cool for 20 minutes before enjoying. Store leftovers in the fridge.

  2. Ok, this recipe is super YUM!!

    We used flax meal instead of flax seed
    And peanut butter instead of cashew butter because that is what we had on hand
    And we skipped the cacao nibs.

    My 4 kiddos and sugar-loving husband all gave them an enthusiastic thumbs up!

      Hi Jennifer! You can try using a different fat such as ghee, and you can always leave the shredded coconut out or substitute with chopped nuts! ?

  4. Made these last weekend, just before the end of the month and arrival of a new recipe bundle! 😉 They are delish! Quite more-ish but also very filling. I used less than half the maple syrup though (& no chocolate chips), because sugar is sugar, even if it’s unrefined. More sugar-free recipes would be great, thank you.

    Concerning the 3 types of seeds- do they provide different health benefits? I am okay with seeds unless they are ones that get stuck in your teeth- the only one I am familiar with is flax seed and it is fine for me. Not sure of the other 2?

      Good question, Heather! They are all super nutritious seeds – flax is a great source of Omega 6 and Omega 3s, while help is a good source of protein and zinc, and chia contains lots of calcium and fiber. ?

  6. These are really good! I used flex meal instead of flax seeds, and I used sunflower seeds instead of hemp. I also added about 1/2 tsp of salt to bring out the sweetness of the pats and the chocolate. What a great versatile recipe!

      Hi there – some companies offer oat flour online, such as Bob’s Red Mill or Thrive Market (or Amazon)!

      I pulsed some quick oats (even old fashioned will work) in the food processor until it was like flour, which worked perfectly as oat flour for these balls.

  7. YUM! Just made these and so happy at how healthy and delicious they are! I have been buying flaxseed bars but they’re expensive and hard, so these are a wonderful, homemade, even healthier replacement. Thank you!

    Oh, and I put 1 cup of quick oats in the food processor for a minute and that gave me oat flour!

    Great cookies!! Can’t wait to make another batch for an upcoming road trip!! I didn’t have hemp seeds so added an extra tbs of coconut. Used peanut butter rather than cashew butter. I omitted the nibs and used just under 1/4 cup of maple syrup. Plenty sweet enough. Thanks for this tasty recipe. Oh, I used a small scoop and Magdeburg about 18 cookies.

    1. I made these when they first came out a handful of time and I’ve since wondered how they would turn out if I cut down on the maple syrup— glad to know it will work!! On my list for this weekend?
