Add the eggs, cashew butter, coconut oil, maple syrup, and vanilla, and mix again.
Drop one tablespoon rounds onto the parchment-lined baking sheet and bake for 10-15 minutes or until the edges begin to brown.
Allow to cool for 20 minutes before enjoying. Store leftovers in the fridge.
