Ingredients
- 1 15 oz can chickpeas , rinsed
- 1/2 cup raisins
- 1/4 cup red peppers , chopped and roasted
- 1/4 cup fresh flat-leaf parsley , chopped
- 2 scallions , sliced
- 3 tbsp olive oil
- sea salt and freshly ground black pepper
- 2 oz feta cheese , cubed
- 1/4 lb prosciutto or salami , thinly sliced and nitrate-free
- 1/2 cup mixed olives

- In a medium bowl, combine chickpeas, raisins, roasted peppers, parsley, scallions, oil, 1/2 tsp salt, and 1/4 tsp pepper.
- Serve with the cheese, meat and olives.
