Ingredients
- 4 cups chopped kale
- 1 cup canned chickpeas , drained and rinsed
- 1 cup strawberries , sliced
- 1/4 cup raw almonds
- 1 cup fresh mint leaves
Dressing
- 1/4 cup tahini
- 2 tbsp apple cider vinegar
- 2 tbsp water , plus more, as needed
- 1 tsp pure maple syrup
- 1 tsp dijon mustard
- 2 tsp nutritional yeast
- pinch of sea salt

Instructions
- Combine all salad ingredients in a large bowl.
- In a small jar, combine all dressing ingredients, whisking until smooth. Pour over salad and toss to combine. If desired, massage into the kale.
