Ingredients
- 2 large sweet potatoes - cut into 1/2" to 1/4" slices
- 2 tbsp olive oil
- 1 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/4 tsp chili powder
- 1/8 tsp cumin
- 1/3 cup sharp cheddar cheese
- 2 large ripe avocados
- 1/4 cup fresh salsa
- 1 lime - juiced
- 4 slices cooked bacon - crumbled

Instructions
- Preheat oven to 425 degrees F. Line two baking sheets with foil. In a large bowl, add spices, sweet potatoes, and olive oil. Mix to thoroughly coat each slice. Spread sweet potato slices in a single layer on the baking sheets. Roast for 20-25 minutes, switching the baking sheet position on the racks (upper and lower) halfway through. Flip the sweet potato rounds and roast for another 5-8 minutes.
- While the potatoes are roasting, make the guacamole. Mash up the avocados and add fresh salsa, lime juice, and 1/2 tsp sea salt. When potatoes are done roasting, sprinkle on cheddar cheese and let melt. Add a dollop of guacamole and a sprinkle of bacon crumbles. Serve warm or at room temperature.
