Sweet Potato Bacon Avocado Bites

  1. Preheat oven to 425 degrees F. Line two baking sheets with foil. In a large bowl, add spices, sweet potatoes, and olive oil. Mix to thoroughly coat each slice. Spread sweet potato slices in a single layer on the baking sheets. Roast for 20-25 minutes, switching the baking sheet position on the racks (upper and lower) halfway through. Flip the sweet potato rounds and roast for another 5-8 minutes.
  2. While the potatoes are roasting, make the guacamole. Mash up the avocados and add fresh salsa, lime juice, and 1/2 tsp sea salt. When potatoes are done roasting, sprinkle on cheddar cheese and let melt. Add a dollop of guacamole and a sprinkle of bacon crumbles. Serve warm or at room temperature.
