Ingredients
- coconut oil , for cooking
- 1 sweet yellow onion , chopped
- 2 cloves garlic , chopped
- 1 lb ground turkey
- 2 cups chopped fresh or frozen kale
- 1 cup chopped fresh or frozen spinach
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp sea salt

Instructions
- Add the coconut oil to a large skillet over medium heat with the onion and garlic and saute for about 3 minutes.
- Add the ground turkey and saute until cooked through.
- Add the kale, spinach, and spices and mix well. Cook for another 5 minutes or until the kale and spinach start to wilt.
- Serve with lettuce leaves or gluten-free taco shells topped with sliced avocado, and tomato.

I can’t use coconut oil. What would you recommend as substitute?
Hi Kelly! You can use a different cooking oil that works for you. Olive oil, butter, and avocado oil are all great options. There are also other oils you could use if these don’t work for you. 🙂
