- 1 cup quinoa - measure when cooked
- 3 tbsp sliced almonds
- 1 oz goat cheese (optional)

- 1/2 cup strawberries - hulled
- 2 tbsp maple syrup
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1/4 tsp sea salt
- 1/4 tsp pepper

Instructions
- Combine dressing ingredients in a blender and blend until smooth.
- In a large bowl, combine salad ingredients and toss with desired amount of vinaigrette. Serve immediately.
Delicious! Swapped cashews for the almonds, and added red onion and fresh basil.
This has so many good for you things, but it tastes like candy!
