- 1 cup arugula
- 4 strawberries - sliced
- 1/8 cup blueberries
- 1 tbsp chopped walnuts
- 4 oz grilled chicken (rotisserie would work well too)
Dressing Ingredients (makes 1 cup)
- 1 tbsp vegan mayo (aka Vegenaise)
- 2 tsp spicy dijon mustard
- 1 1/2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp lemon juice
- 1 tbsp maple syrup
- 1 tsp shallots - finely chopped
- 1 tbsp poppy seeds
- 1/2 tsp garlic powder
- dash of pepper

- Combine all salad ingredients in a large bowl. Whisk together all dressing ingredients and use enough to lightly coat the salad.
