Ingredients
- 1 cup peas (fresh or frozen)
- 2 cups arugula
- 1 green onion sliced
- 2 radishes thinly sliced
- 2 tbsp goat cheese crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tsp raw honey
- 1 tbsp apple cider vinegar
- sea salt + pepper to taste

Instructions
- Blanch peas in boiling water for 1-2 minutes, until they turn bright green. Plunge peas into an ice bath and drain. Spread peas on a dish towel to dry.
- In a large bowl, combine arugula, green onion, radishes, and peas. Whisk together olive oil, lemon juice, dijon mustard, honey, apple cider vinegar, salt and pepper. Toss salad with dressing as desired and top with crumbled goat cheese. Serve immediately.
