  1. Blanch peas in boiling water for 1-2 minutes, until they turn bright green. Plunge peas into an ice bath and drain. Spread peas on a dish towel to dry.
  2. In a large bowl, combine arugula, green onion, radishes, and peas. Whisk together olive oil, lemon juice, dijon mustard, honey, apple cider vinegar, salt and pepper. Toss salad with dressing as desired and top with crumbled goat cheese. Serve immediately.
