- 10 large eggs , whisked
- ½ tsp garlic powder
- 1 pinch salt and pepper
- ½ cup fresh spinach , chopped
- ¼ cup sun-dried tomatoes , in oil, chopped
- ½ cup feta , crumbled

Instructions
- Preheat the oven to 350F. Very generously grease a muffin tin with cooking spray.
- In a large bowl, combine the eggs, garlic, salt and pepper, whisking to combine.
- Divide the spinach, sun-dried tomatoes, and feta cheese into each muffin tin.
- Pour the egg mixture over top.
- Bake for 15 minutes, or until set. They will deflate once cooled.
- Store in the fridge for up to 5 days in an airtight container. Enjoy!
