  1. Preheat the oven to 350F. Very generously grease a muffin tin with cooking spray.
  2. In a large bowl, combine the eggs, garlic, salt and pepper, whisking to combine.
  3. Divide the spinach, sun-dried tomatoes, and feta cheese into each muffin tin.
  4. Pour the egg mixture over top.
  5. Bake for 15 minutes, or until set. They will deflate once cooled.
  6. Store in the fridge for up to 5 days in an airtight container. Enjoy!
