Ingredients
- 1 tbsp extra virgin olive oil
- 2 green onions , chopped
- 1 clove garlic , chopped
- 4 cups spinach , roughly chopped
- 1 large egg
- ⅓ cup crumbled feta cheese
- ½ cup shredded mozzarella cheese
- 2 tbsp fresh chopped dill
- 1 tsp dried mint
- 4 small (6-inch) almond flour or whole wheat tortillas

Instructions
- Heat the olive oil in a skillet over medium heat. Add the green onions and garlic, cooking for 3 to 4 minutes, or until fragrant. Add the spinach, and cook until wilted, about 4 minutes.
- Transfer the spinach to a bowl. Let cool for 10 minutes. Add the egg, feta cheese, mozzarella cheese, dill, and mint to the same bowl.
- Add a tortilla to the pan, and top with half of the spinach mixture. Cook for 3 to 4 minutes, and top with a second tortilla. Cook until the eggs are set and the cheese is melted. Flip, and brown the tortilla on both sides.
- Repeat with remaining filling and tortillas. Slice and enjoy.
