Instructions
  1. Heat the olive oil in a skillet over medium heat. Add the green onions and garlic, cooking for 3 to 4 minutes, or until fragrant. Add the spinach, and cook until wilted, about 4 minutes.
  2. Transfer the spinach to a bowl. Let cool for 10 minutes. Add the egg, feta cheese, mozzarella cheese, dill, and mint to the same bowl.
  3. Add a tortilla to the pan, and top with half of the spinach mixture. Cook for 3 to 4 minutes, and top with a second tortilla. Cook until the eggs are set and the cheese is melted. Flip, and brown the tortilla on both sides.
  4. Repeat with remaining filling and tortillas. Slice and enjoy.
