Heat the olive oil in a skillet over medium heat. Add the green onions and garlic, cooking for 3 to 4 minutes, or until fragrant. Add the spinach, and cook until wilted, about 4 minutes.
Transfer the spinach to a bowl. Let cool for 10 minutes. Add the egg, feta cheese, mozzarella cheese, dill, and mint to the same bowl.
Add a tortilla to the pan, and top with half of the spinach mixture. Cook for 3 to 4 minutes, and top with a second tortilla. Cook until the eggs are set and the cheese is melted. Flip, and brown the tortilla on both sides.
Repeat with remaining filling and tortillas.
Slice and enjoy.
