Ingredients
- 4 eggs
- 1-2 cups spinach
- 5 grape tomatoes - halved
- 1 small onion
- 1/2 cup fresh salsa
- cilantro (optional)
- 1/2 avocado - sliced
- salt + pepper to taste
- 1 tbsp olive oil

Instructions
- Heat olive oil in a pan over medium heat. Add onion and sauté until translucent. Add spinach and tomatoes. Cook until spinach is wilted. Remove from pan and set aside.
- Scramble eggs in a mixing bowl and pour into pan. Cook over low heat until eggs are scrambled. Add spinach, tomatoes, onions, salt, and pepper to the pan. Serve topped with 1/4 of an avocado (per person) and chopped cilantro, if desired.
