Ingredients

Instructions
Heat olive oil in a pan over medium heat. Add onion and sauté until translucent. Add spinach and tomatoes. Cook until spinach is wilted. Remove from pan and set aside.
Scramble eggs in a mixing bowl and pour into pan. Cook over low heat until eggs are scrambled. Add spinach, tomatoes, onions, salt, and pepper to the pan. Serve topped with 1/4 of an avocado (per person) and chopped cilantro, if desired.
