Ingredients
- 1 bunch curly kale , de-stemmed and roughly chopped
- 2 tbsp extra virgin olive oil , divided
- ¼ tsp kosher salt
- 2 tsp honey
- 1 tsp dijon mustard
- juice of one lemon
- ½ tsp lemon zest
- ½ tsp orange zest
- 1 medium navel orange , chopped
- ½ fresh parsley , chopped
- ¼ red onion , thinly sliced
- ¼ cup almonds , roughly chopped
- 4 oz hot or cold smoked salmon

Instructions
- Place the kale in a large bowl. Add 1 tablespoon of olive oil and kosher salt. Use your hands to massage the kale to soften the leaves.
- In a small bowl, combine the remaining olive oil, honey, mustard, lemon juice, lemon zest and orange zest. Add to the kale, tossing to combine.
- Add the chopped orange pieces, parsley, red onion, almonds and salmon. Serve.
