Ingredients

bunch curly kale
, de-stemmed and roughly chopped

extra virgin olive oil

juice of one lemon

medium navel orange

hot or cold smoked salmon
Instructions
Place the kale in a large bowl. Add 1 tablespoon of olive oil and kosher salt. Use your hands to massage the kale to soften the leaves.
In a small bowl, combine the remaining olive oil, honey, mustard, lemon juice, lemon zest and orange zest. Add to the kale, tossing to combine.
Add the chopped orange pieces, parsley, red onion, almonds and salmon. Serve.
