Ingredients
- 1 slice sourdough or rye toast , toasted to desired doneness, gluten-free sourdough if preferred
- 2 tbsp cream cheese , or non-dairy alternative
- 2 oz cold smoked salmon "lox"
- 1 sliced red onion
- 1 sliced tomato
- 3-4 capers
- 2-3 cucumber slices
- fresh dill , to taste
- lemon zest , to taste
- black pepper , to taste
Salad
- 1 cup lettuce , any kind
- 2-3 cherry tomatoes , halved
- ¼ cup chopped cucumber
- 2 tsp fresh parsley
- 2 tbsp pumpkin seeds
- 1 tsp lemon juice
- 1 tsp olive oil
- sea salt and pepper , to taste

Instructions
- Preparation: Layer the sourdough with cream cheese. Top with lox, red onion, capers, and cucumber slices. Top with dill, lemon zest, and black pepper. Top with the other slice of sourdough.
- Salad: In a bowl, combine lettuce, tomatoes, cucumber, parsley, and pumpkin seeds. Drizzle with lemon juice, olive oil, salt and pepper.
