- 2 slices sprouted grain bread or gluten-free bread (I like Ezekiel brand as a sprouted grain option)
- 1/3 cup cannellini beans - smashed into a paste
- 4 slices cucumber (long + thin)
- microgreens - pea shoots or sprouts
- 1/2 avocado
- salt + pepper
- hot sauce (optional)

- Toast bread. Spread mashed white beans on toast and top with cucumber, sprouts/greens, avocado, salt, and pepper. Add hot sauce it that's your style!
