- 4 oz albacore tuna packed in water
- 1 tbsp high-quality mayonnaise or Vegenaise
- 1 tbsp dijon mustard
- 1 tbsp fresh parsley - chopped
- fresh pepper

Instructions
- Drain tuna. Mix tuna, mayonnaise, dijon, parsley, and pepper in a bowl. Serve over greens or with healthy crackers. (I recommend Mary's Gone Crackers or Nut Thins.)
