Ingredients
- 2 cloves garlic - minced
- 1 yellow onion - chopped
- 1 large (or 2 small) chicken breasts
- 1 (16 oz) jar salsa verde
- 1 (15 oz) can cannellini beans
- 1 tbsp cumin
- 1 tsp oregano
- 1/4 tsp fresh ground pepper
- 2 cups chicken broth
- cilantro for topping (optional)
- plain Greek yogurt for topping (optional)

Instructions
- Place chicken in the bottom of slow cooker. Drain and rinse the beans. Add them to the slow cooker along with chopped onion, garlic, salsa, cumin, oregano, pepper, and chicken broth. Cover and cook on low for 7 hours.
- Prior to serving, remove chicken, shred and return to slow cooker. Serve with fresh chopped cilantro and a dollop of plain Greek yogurt.
I live in Australia and I’m having trouble finding salsa verde. Apart from making my own, is there a simple alternative/ substitute that you recommend? Thanks!
