Ingredients
- 1 tbsp coconut oil
- 1 yellow onion - chopped
- 2 cloves garlic - chopped
- 1 tbsp fresh basil - chopped
- 1 (28 oz) can diced tomato or fresh tomato if you have it at your market
- 1/2 cup water
- 3/4 cup coconut milk (from a can)
- 1/2 tsp sea salt
- 1/4 tsp black pepper

Instructions
- Sautée onions in coconut oil until tender. Add garlic, tomatoes, basil, and water. Reduce heat to low and simmer for about 25 minutes. Stir in coconut milk and blend to purée.
This is one of my top 5 favorites. So easy to make and so delicious!
Is there any possible sub for the coconut milk? I really can’t stand coconut and can pick even a little of the flavor up in recipes.
Hi Ashley! You could certainly use another kind of milk your choice – whether that’s dairy-free or not. Soy milk, almond milk, and oat milk are all great substitutions as are many others! 🙂
