- 1 large English cucumber - cut into 1/4 inch rounds
- 1 small red onion - thinly sliced
- 1/4 cup apple cider vinegar
- 1 tbsp olive oil
- 2 tsp dill

Instructions
- Combine cucumbers, onion, vinegar, olive oil, and dill in a large bowl and mix well. Refrigerate for 2-3 hours (or overnight) before serving. Serve cold.
