Ingredients
- 2 medium zucchini sliced into ½ inch rounds
- 2 medium bell peppers (or 1 bag mini bell peppers), chopped into 1 inch pieces
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- 1 medium red onion , sliced
- 4 4 oz salmon filets
- 2 tbsp pesto
- lemons , for serving

Instructions
- Preheat the oven to 400°F/ 204°C.
- Add zucchini, bell pepper, and onion to a large baking tray.
- Sprinkle vegetables with Italian seasoning and olive oil.
- Bake for 15 minutes. Remove from the oven, and push the vegetables to the side.
- dd the salmon to the tray. Top with pesto.
- Bake for an additional 15 minutes, or until salmon is fully cooked and vegetables are tender.
- Serve with lemon wedges.
