Ingredients
- 1 lb shelf-stable gnocchi , gluten-free if preferred
- 1 red onion , sliced into half moons
- 3 bell peppers , cut into 2-inch strips, or one 16oz bag mini bell peppers
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning blend
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp sea salt
- ¼ tsp black pepper
- 1 lb (4) uncooked sausages , casings removed
- ½ lemon
- chopped fresh parsley , to garnish

Instructions
- Preheat the oven to 400F.
- Arrange the gnocchi, peppers, and onions in an even layer. Drizzle with olive oil, and sprinkle with italian seasoning blend, garlic powder, paprika, salt and pepper.
- Arrange the sausages on the pan. Squeeze the lemon juice overtop.
- Roast for 15 to 20 minutes, stirring halfway through, until the sausages are fully cooked.
- Top with fresh parsley, serve, and enjoy!
