Ingredients
- 1 pre-cooked chicken apple sausage link (I like Applegate Farms brand)
- 1 egg
- 2 cups kale - washed and chopped
- 1 tbsp coconut oil
- salt + pepper

Instructions
- Slice chicken sausage into bite size pieces and set aside. Heat coconut oil in a skillet over medium heat. Add kale and sauté until wilted. Remove kale from pan and set aside.
- Add eggs and sausage to the skillet and scramble until cooked through. Add kale back into the skillet, sprinkle with salt and pepper, serve immediately!
I just made this with a few modifications. I added some red bell pepper with the kale. Omitted the sausage and did 2 eggs. Topped with some chimichurri I had leftover. Fantastic use of the abundance of kale I have in my garden right now!
