Ingredients
- coconut oil or avocado oil , for cooking
- sea salt + pepper , to taste
- 2 medium sweet potatoes
- 1 salmon fillet , skinless
- 1 clove garlic , minced
- 2 tbsp yellow onion , minced
- 2 tbsp taco seasoning (like Simply organic brand)
- 2 tbsp water
- sliced avocado , for serving
- shredded cheese , optional, for serving

Instructions
- Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper.
- Add the sweet potatoes and poke a few holes with a fork. Drizzle with oil of choice and season with salt and pepper.
- Bake for 40-45 minutes or until tender.
- While the sweet potatoes are cooking, preheat a large skillet over medium heat with oil. Add the salmon fillet, and cook for 12-15 minutes or until the fish begins to flake. Once it does, flake the salmon with a fork and add the garlic, onion, taco seasoning, and water. Cook for another 2-3 minutes.
- Add the salmon taco mixture to the center of each sweet potato and serve with sliced avocado and a sprinkle of shredded cheese, if desired. Enjoy!
