  1. Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper. 
  2. Add the sweet potatoes and poke a few holes with a fork. Drizzle with oil of choice and season with salt and pepper.
  3. Bake for 40-45 minutes or until tender.
  4. While the sweet potatoes are cooking, preheat a large skillet over medium heat with oil. Add the salmon fillet, and cook for 12-15 minutes or until the fish begins to flake. Once it does, flake the salmon with a fork and add the garlic, onion, taco seasoning, and water. Cook for another 2-3 minutes.
  5. Add the salmon taco mixture to the center of each sweet potato and serve with sliced avocado and a sprinkle of shredded cheese, if desired. Enjoy!
