Ingredients
- 3/4 cup brown rice , rinsed
- 1 1/2 cup water
- pinch of sea salt
- 1 tbsp rice vinegar
- 4 small salmon fillets
- 1 tbsp sesame oil
- 2 tsp tamari (or soy sauce)
- 1 tbsp sesame seeds
- 1/2 English cucumber , thinly sliced
- 2 medium carrots , peeled and cut into matchsticks
- 1 avocado , sliced
- 8 pieces seaweed snacks
- tamari or soy sauce (for serving)

Instructions
- Preheat the oven to 400°F / 204°C. Line a tray with baking paper.
- Combine brown rice, water, and salt in a pot on the stove. Bring to a boil, reduce to simmer, and cook, covered for 40-45 minutes. Remove from heat,and let sit, covered for 10 minutes. Then add rice vinegar.
- Pat salmon dry with a paper towel. Drizzle with sesame oil, tamari (or soy sauce), and sesame seeds. Bake for 12-15 minutes, or until it is fully cooked and flakes easily.
- Plate rice, salmon, vegetables, avocado and seaweed snacks. Enjoy!
